I'm Reading Again

Okay, I bet you were wondering where I have been?  The summer is really crazy here as I have to keep the kids busy because we can't afford any camps so we are doing this and that.  Haven't had much time to scrapbook.  However, even with this busy life, I have been reading again at the parks and pools.  Before the  kids were born I used to read a lot especially when I was working in New York City commuting to work via bus or train.  So anyway if you want to follow my reading.  I have made up a new blog which you can find at the tab above or you can go to http://creativetripletmomreads.blogspot.com/

CT - P52 Save the Date Collection - Kathy Winters Designs

Kathy Winters Designs has a great new P52 Save the Date Collection 01.  She plans to make more in the year so watch her store.  She has them as a full collection or if you want just one or two or five you can do so as well.


Yes, I'm still on top of my project 365 or should I say Project LIFE scrapping.  It's my 5th year doing this project and I really enjoy the Project LIFE format and just love Kathy Winters Designs new kit.  Here's my week 13.

February - Project Life Shopping

I'm always on the look out for project life kits.  I have a few on my wishlist and whenever they go on sale I try to snatch them up.  Today, I was able to get 3 more kits by Pixelily Designs in her  Life Captured series all for $1 each.  They are on sale till Feb 5 so hurry.    Last month I got a few of the other months.  I'm now just waiting for July and August to go on sale and I should have the entire series.

What's For Dinner - Chicken & Calico Beans

I struggle with  meal planning.  I just can't do it.  I have tried but it just does not work for me.  I'm always struggling to get a meal on the table each night.  Tonight it's chicken night.  I always look in freezer to see what we have and then I either try a new recipe or something I've done in the past.  My husband requested this again.  I'm going to share it with you.  Of course, I have picky triplets so I made an additional batch of grilled chicken and am making pasta for those picky ones.

This is one of my husband's favorites:


Chicken & Calico Beans

1 tbsp veg oil
1 onion chopped
2 stalks celery chopped
1/2 cup ketchup
1/2 cup brown sugar
1 tbsp prepared Mustard
1 tsp white vinegar
1 tsp salt
2 cups chopped cooked chicken (I grill it).
1 (16 oz) can red kidney beans, drained
1 (16 oz) can baked beans

1. Preheat oven to 375.  Heat oil in a skillet over medium high heat; add onion and celery.  Cook stirring occasionally, until celery is tender about 5 minutes.

2. Combine ketchup, brown sugar, mustard, vinegar and salt in a small bowl.

3. Add chicken and beans to skillet; stir well.  Pour ketchup mixture over chicken and beans; stir to coat.

4. Spoon mixture into a med casserole.  Bake chicken mixture until hot and bubbly, about 35 minutes.

Variation: If you have white beans or pinto beans on hand, they can be used instead of kidney beans.

Also turkey, ham or pork can be in place of the chicken.
