What's For Dinner - Chicken & Calico Beans

I struggle with  meal planning.  I just can't do it.  I have tried but it just does not work for me.  I'm always struggling to get a meal on the table each night.  Tonight it's chicken night.  I always look in freezer to see what we have and then I either try a new recipe or something I've done in the past.  My husband requested this again.  I'm going to share it with you.  Of course, I have picky triplets so I made an additional batch of grilled chicken and am making pasta for those picky ones.

This is one of my husband's favorites:


Chicken & Calico Beans

1 tbsp veg oil
1 onion chopped
2 stalks celery chopped
1/2 cup ketchup
1/2 cup brown sugar
1 tbsp prepared Mustard
1 tsp white vinegar
1 tsp salt
2 cups chopped cooked chicken (I grill it).
1 (16 oz) can red kidney beans, drained
1 (16 oz) can baked beans

1. Preheat oven to 375.  Heat oil in a skillet over medium high heat; add onion and celery.  Cook stirring occasionally, until celery is tender about 5 minutes.

2. Combine ketchup, brown sugar, mustard, vinegar and salt in a small bowl.

3. Add chicken and beans to skillet; stir well.  Pour ketchup mixture over chicken and beans; stir to coat.

4. Spoon mixture into a med casserole.  Bake chicken mixture until hot and bubbly, about 35 minutes.

Variation: If you have white beans or pinto beans on hand, they can be used instead of kidney beans.

Also turkey, ham or pork can be in place of the chicken.

2013 - Project 365/Life

It's been a while since I actually written on my blog about my life.  I decided I will try to post more in 2013.  What have I been up to?  I've been keeping myself very busy.

In 2012, I returned to work part time working at my children's school which has been taking up a lot of my free time.  I also joined the PTA as treasurer in addition to my being still a girl scout leader for my daughters' Brownie Troop.

In 2013, my children are starting to add more activities to their daily schedule.  My son has decided to give up on baseball and take up piano lessons instead.  My one daughter will do gymnastics while the other will return to dance.  This is in addition to girl scouts and boy scouts that they already do.

In my free time I have added reading and knitting to my schedule which has also cut down on my scrapping time.  But I must say that I did complete 2012 project 365 in life style digitally.  That makes 4 years completed project 365.  You did read that correctly.  I am starting my 5th year doing photo of a day for 2013.

What has helped me to keep up.  Most definitely my iphone and my point and shoot camera.  I posted every night to ohlife.com my journaling for the day which really helped when I fell behind in the summer still taking my photos just not enough time to get my layouts done.  Ohlife sends you an e-mail every day and you just reply to it about your day.  It was a lifesaver.

Okay, now it's time to start 2013.  I just did some shopping thanks to my mom for giving me some money for Christmas and would like to share what I have gotten so far and plan to use for my 2013 project 365/Life pages.  Since I am usually at GingerScraps most of the time I decided to shop there for most of my new products. Most of these are on sale now so hurry if you want to get them before price increases and right now if you spend $10 you get this free kit below.


The templates I will be using for the yearly project are from Crisdam Designs.  Right now they are on sale 25% off.  I have followed this designer from another sight and so glad that she is now at Gingerscraps so I can continue to use her designs.


I wanted to start with a January kit by Connie Prince.  I've been collecting her kits for a while now as well.  I love her wordart and her style as well.


and I had to get the matching January Wordart (only because I wanted the Aquarius that's my birth sign and I'm a sucker when it comes to wordart) also by Connie Prince


Speaking of wordart I just had to have this one since my favorite show is DAYS OF OUR LIVES been watching it since I was a teenager.  This wordart is on sale too for only $1 but hurry as I don't know when it will go back to normal price.


If you are working on your cover page for 2013 you must have this wordart by my friend Kathy Winters Designs who I CT for.  These will be great for the cover page.


Last year I used these frames and may continue to use these this year.  They are great as it tells me which week it is and it's out of the way so I can fit my photos and journaling.


While searching for items for my 2013 project I found Life Captured collabs by Pixelilly and Ginger Scraps.  January to June is actually on sale for $1 each but  hurry before price increases.  So I picked them up and added July to Dec in my wishlist.  These are awesome since I like to mix and match my kits especially while working on my project layouts.
